About 15kg though compared to the 11Ish of the Lithium. If shes not looking for a durable commuter, the Subway may not be the one

She wont be able to tell the difference when shes sat on the bike. Shes not competing, it wont make that much difference.
You say that, but IME even the occasional rider notices the difference. My wife has a Whyte which is very similar to the Pinnacle and says she felt a difference immediately, although she couldn't articulate exactly why, it just felt more "lively" to her. She loves riding it.

Is she going to commute on it as it's on C2W? If so, she might want to add money for full mudguards, rack (checking these will fit ok), lights etc to her voucher

The Pinnacle should be fine if she doesn’t have any substantial hills to climb. Check out their e x demo hybrids, some good savings.
