These guys have just opened their latest branch in Leeds Market. Just brilliant - make up a spice mix on the spot to their recipes, or tweak and adjust to your specs.

Well impressed - partly 'cos it's how spices and herbs should be sold (aye, I know; I was spoiled utterly by the riotous joys of spice markets/stalls in Egypt and Yemen). But mainly 'cos it was just plain and simple exciting (OK, I'm sad! Secret bit ... oh, no I'm not!) to have a conversation with people who understood and enjoyed flavour and spice and herb ... and actively enjoyed learning from a customer about spice mixes from other culinary traditions.

I had spaggy bol last night, 2nd heating of a nearly traditional version I cook from scratch (I add Mushrooms to mine)

The thing to remember with a Bolognese Sauce is No Herbs, you can make a pasta sauce with herbs in it but it ain't a Bolognese.
