Forgot to post here! On St Patrick’s day I decided to mark the occasion with some Guinness. In the form of a cake.

By the way, it didn’t sink in the middle (well not as much as it appears here), that’s a consequence of the quite slack cream cheese icing being dragged down when cut.

Quite a dense cake and not over-sweet. It used dark brown muscovado sugar, dark chocolate and cocoa (amongst other things). The generous ‘head’ gives a nice sweet boost.

Did you use 'Guinness' or other readily available stouts in the ingredients?
I once baked a fruit cake with Guinness it wasn't overly succesfull ,I had used wholemeal flour, because that why it required

It's my birthday and we've just come home from Costa Rica, so I tried recreating a tres leches for my birthday cake.

Let's just say that my pancreas may never forgive me!

Unless you are diabetic your pancreas will be fine.

I take there’s some reasonable explanation for the absence of photos of this tres leches cake?
A fair bit of it has been eaten…. I think my Dad took some ‘before’ photos (I made the cake and celebrated my birthday over the weekend while my parents were staying with us).
