This is a take on Bakewell Tart. None of my family except me like almond-flavoured stuff so I use a basic sponge for the top rather than a frangipane. Sweet crust pastry, blind-baked, spread with raspberry jam, topped with the sponge - a quick and easy dessert to accompany the spontaneous roast lunch my wife provided today.

I'm with your family. Bakewell can keep their tarts. Usually not enough jam, and heavy on top.

At the stall of an 'artisan' bakery today, I noticed cranberry sourdough cakes for £3.20 each.
The description of 'sourdough cake' seemed a bit odd to me as I associate sourdough with bread and I've never come across a sourdough cake before despite the many 'artisan' / craft' bakeries I've investigated - ! :whistle:

I've used sourdough to raise yeasted cakes / sweet breads like babka and pannetone. Gives them a much richer flavour compared to using yeast.

Yeast-raised cakes are a staple of Polish and German baking, btw.
