This is a take on Bakewell Tart. None of my family except me like almond-flavoured stuff so I use a basic sponge for the top rather than a frangipane. Sweet crust pastry, blind-baked, spread with raspberry jam, topped with the sponge - a quick and easy dessert to accompany the spontaneous roast lunch my wife provided today.

I'm with your family. Bakewell can keep their tarts. Usually not enough jam, and heavy on top.
