Hi Dave, good man, there's endless fascination watching the wildlife in your garden. I got my hedgehog houses pre built from a lady in Portland ( Dorset ). There may well be a local hedgehog charity that can offer advice, but there are several online guides to building your own. The feeding station is a large plastic storage crate with a lid, again there's some really excellent online guides as to dimensions etc. It's trial and error with the feeding station entrance, you build a sort of dogleg ( I used house bricks) to stop the cats pinching the food). Dry cat food is ideal for hedgehogs, don't give them milk as it's not good for them.
Cameras, I have Eufy wireless ones, inexpensive, don't need a subscription, 2K resolution and excellent battery life.
