I’ve always fancied having a go at meatloaf. It looks like the sort of thing I and my family would like but my mind conjures up images of dried, overcooked shoe leather. Got a reliable recipe I can start with?

Not so much a recipe, more a method, because that's how I cook...
250g beef mince (NOT the extra lean stuff)
Half a dozen good pork sausages, de-skinned
One egg
Two slices of bread, torn / blitzed into fresh breadcrumbs
A small bunch of parsley, finely chopped
Half a large or one small onion, finely chopped
Two cloves of garlic, finely chopped
Half a teaspoon of salt
A generous grinding of black pepper (to taste)
A generous grating of nutmeg
Chuck everything into a mixing bowl and squish it all together until well mixed. Grease and line a small loaf tin (7x3 inches). Dollop the meat mixture into the tin and mould / press nicely but not too hard. Bake in a preheated oven 180C fan (you'll have to look up similar for your over as mine's an electric fan oven) for 35 to 40 mins. Rest for 5 to 10 mins before serving.
The trick for good meatloaf is to have meat that isn't lean. You could also wrap it in streaky bacon if you like. Serve with creamy tomato sauce or onion gravy.
This is excellent when cold, sliced thinly in sandwiches with a dab of mustard. Knocks the socks of any pre-sliced haslet that you can get in the supermarket.

Gnocchi alla Sorrentina followed by apple & ginger crumble with custard.
Used homemade Arrabiata sauce made with tomatoes from the garden, the gnocchi were made with leftover mashed potato, and the whole thing was topped with all the random bits of cheese in the fridge that wanted using. The apple crumble was made with Huntington Codling and Jolly Miller apples (mid-season cookers) from the community orchard.
I may have eaten too much...
