Galloping gourmet... late back from teaching, and had nine minutes flat to get the pork cutlets dish in the oven from scratch before a Zoom lesson. Gert lush, with onions, garlic and lentils.

Lamb aloo keema, basmati rice, steamed green beans and a mint raita.

Meat (diced lamb shoulder) and potatoes bought on yellow sticker, tomatoes and mint from the garden, basmati rice (10kg sack) bought on a 25% off clubcard offer.

Most expensive item per serving were the green beans - £1.10 on a clubcard offer for two not overly generous portions. Trouble is, I do like them... :blush: Yes, I know there are cheaper (fresh) ones, but they're so pot luck. Sometimes they're nice, other times you might as well eat a packet of shoe laces...

Cod en papillote with homemade pesto and roast tomatoes.

Served on a bed of couscous* with peas and a drizzle of basil infused oil.

*Done last minute because nearly three hours later the wild rice supposed to take 45-60 minutes is still not done. Never again.

Italian theme tonight...
Had a load of tomatoes from a neighbour so did some bruschetta on a nice bit of sourdough.
Main course pasta alla Genovese. First time I've made it. Nice change from the usual tomato based ragu. Used a mix of beef and pork, cooked until falling apart. Amazing how the mountain of onions melts down into a sauce, leaving a pleasant sweetness.
Bottle of Barolo to wash it all down.

French merguez I found in the freezer along with some small potatoes that had been pre cooked and sort of fried off with the sausage fat
Fridge raid salads.

Strawberries, wild honey and cream .

A bottle of red wine was lost in the process. Tomorrow's coq might be a bit light on the vin.

Another Vincenzo's Plate-inspired supper of a tomato, ricotta and mozzarella pasta bake. Albeit with some slightly cheaper ingredients, e.g. swapping the pecorino for cheddar and using ordinary mozzarella as opposed to buffalo. Plus it cleared a load of my home grown tomatoes.

Still, very lovely indeed.

Spaghetti with courgette, chilli, garlic and lemon.

Couple of nice yellow courgettes from the Mother in Law's garden. Sliced thinly and roasted with chilli, garlic, olive oil and seasoning.

Meanwhile cooked the pasta, then added to the roasting tin on the heat with a couple of knobs of butter, lemon juice and some pasta water to create an emulsion. Bit of basil to finish and then obviously parmesan.

Nice summer dish.

Spaghetti carbonara. Done ‘properly’ except for substituting the required guanciale with the generally accepted pancetta. I’d been a bit wary of this dish but it turned out to be quick and straightforward. It requires good timing but the results were great. Just eggs, pecorino romano, pancetta, black pepper and a splash of pasta water.

piece of steak reduced when i popped to the supermarket went nice with chips :smile: , i like a nice piece of steak but rarely get the chance as mrs ck never thinks to buy any .
