I didn't do much cooking - heated up two pies for myself and the wife, and a pasta meal for the daughter.
I did make my own mashed potato as mine is much better, much cheaper and much lower in salt than the pre-made stuff.

I do the same with new potatoes - can't bear those dismal microwave packets. Just chuck the new potatoes in a pan - chop in half if a bit big, boil em up, drain - chuck in some mixed herbs, chopped fresh basil and oregano if i have it, otherwise the dried stuff, a good knob of butter and one turn of table salt from the grinder. Lid on the pan. Agitate the spuds for 30 seconds. Pour onto plates. Lovely - potatoes are nicely coated in herbs and butter.

Mushroom & parsley risotto.
 
Carbonara, from scratch.
Cheated with pre made spaghetti.
Panic to find the garlic was all gone.
Rush to local "open all hours" saved the day

Ummm, I don't think you're supposed to put garlic in a carbonara... Just egg (yolk), pancetta / guanciale, pepper and pecorino / parmesan. Plus your pasta and some pasta water.

Tonight's tea is steak and chips, fruef onion and tomato.
The steaks were Aberdeen Angus grass fed from Asdas yellow sticker fridge...basically £8 odd for two reasonable sized steaks, really quite good considering the price of meat ATM

As the GLW is away for a week or so seeing her mum, I'm fending for myself and tending our cats.
Looking in the 'fridge, on Thursday I shall spend some time creating something from mackerel, avocados, onions, carrots, fresh spinach with cheese, coleslaw & humous available to liven things up - ! :laugh:
