Today was just about fuelling up to try to make sure I maintain two meals a day, no snacks, no top ups.
So lunch was sirloin steak, a baked.potato and broccoli with a healthy portion of Greek yoghurt and blueberries
This evening (5.30) was lamb chops, mashed potato, cauliflower and a bit of broccoli, then some rolled oats with milk (that was a bit odd but its a slow burn food that will hopefully carry me over)

Nothing now (hopefully) till midday tomorrow, only water, no tea, coffee or fizzy drinks.

I made this yesterday for consumption today after a roast lamb dinner.

This is (a take on) a Polish cake called Karpatka. It is named for the Carpathian Mountains which it supposedly resembles.

It is essentially two rounds of choux pastry sandwiching a crème mousseline, with a cherry compôte layered in the middle, all dusted with icing sugar ‘snow’. The inclusion of a compôte is apparently not traditional but does work well with the vanilla crème.

It’s a bit of effort but definitely worth it!

Should really be a cheesecake or a mazurek for Easter, btw... ;)

But as that looks absolutely divine, I'll let you off! And if you want to be *really* traditional, use plum butter (powidła).

A lazy day here today, but last night, I did roast topside of beef, a jacket potato and red cabbage braised with apple & orange.

Just going to have a roast beef sandwich and some pear & almond crumble this evening.

This afternoon, I made soup. Just the thing on the warmest day so far…

Celeriac with Green Herbs and Lime (Covent Garden recipe)

It’s very Thai in style, coriander, lime, ginger, coconut with a green chilli.

Nice big celeriac means I have ten portions to freeze 😀
