145mm on my road bike and 155 on my MTB.

I can't really see the point of the question, no be honest. The measurement can be what you make it. Just bend it to the required width. Bend out, and then in, so that the points remain parallel.

Thanks, The eyelets are 7" apart on my bike. I'd rather find a rack that fits well on my bike rather than having to bend or modify the rack too much.

You may have a bit of a job to find one that fits exactly. Most bike shops/people bend the stays to fit, once you have bolted it on, that pulls it into shape. It can be bolted on the inside or the outside of the frame, depending on where the eyelets are, which gives some extra wriggle room.
