I found that when putting a tyre on with levers if I wasn't very careful I would give myself a puncture, hence why I tried without.

I think more or less everyone's father has said 'don't use levers to get the tyre back on' and by and large people do their best to do that. Sometimes you can get a tyre off without levers (and 26" wide tyres are normally pretty straightforward) but as @Racing roadkill said:
not so much so with wired beads, or super puncture resistant types.
It'd be a confident person who went out without levers on a road bike, relying on being able to get a tyre off. Or one with very strong thumbs and a good knowledge of the slackness of the fit of his/her tyres (oh, and 'world peace' aka talc).

Air out of inner.
Work your way all round the tyre with your thumbs, pushing the bead up and away from the rim. Then do the other side. You have pushed both beads into the rim well and thus created some slack, which can now be pushed to one area on the rim.
Hold the wheel horizontally (tyre against thighs) and work your hands around the tyre towards 12 o'clock, pushing the tyre inward toward the hub and upward (ie tangentially) until the bead has enough slack at the top of the rim. Grip the tyre where it's slack with both hands at the top of the rim and, with your thumbs, push the bead in, up and then roll it forward over the edge of the rim facing you. Now slide your fingers (carefully for wire beaded tyres) under to loose edge and pull it away from the rim
