You're going to get a lot of replies about what people use...! But in my experience of using about 5 or 6 types, I think the Specialized cork wrap is pretty good. Excellent levels of padding and no need for gel padding under the tape so it keeps the bars nice and small. I'm just about to buy some more of it as it happens in black as the white stuff I've used this summer is a bit grubby now.
I like Fizik bar:gel, because you can limit the extra padding to where you want it - the tape is nice stuff too (and the gel pads are reusable, so you don't have to stay with Fizik if you don't get on with it).
I treat my hack/commute/mileage bike to a new wrap of Cinelli Cork Gel tape every year, comfortable, wraps easily, holds up well to the weather, I use yellow and it doesn't seem to get too dirty.
When I started this post the prologo was the stuff I was thinking of but the phat tape is really appealing and quite clever with the gel sections, like it!
