Goodness... I'd struggle to think of any one thing. So here's a list of the things I can't be without other than the obvious ones:

crock pot
rice cooker
terracotta chicken brick - used for baking bread
silicone baking mat
bamboo bannetons
roasting tins, baking sheets, cake pans etc.

Chef's knife

Same here. We have a set of knives that my wife bought before she knew me so they must be well over 20 years old. Other knives have come and gone over the years but these have outlived them all, which goes to show that it's worth investing in quality. The 10-inch chef's knife is by far the most useful utensil in our kitchen.
