MrsD has decided its a must try dish.
From what I read its basically rice with "stuff" added. In which case I imagine I need something to go with it.
Any ideas?**
**nothing heavy as both our appetites are very poor at present.

You can just have it as a main dish, it's fairly substantial as it is, if it's made close to the original idea. I sometimes have it with cajun shrimp (pic below), just dust some raw prawns with a bit of flour, cayenne pepper, salt, garlic powder, and fry them in a bit of butter.
You could also just have a green salad with it.

The "dirty" element should traditionally be minced chicken livers, it's not really dirty rice without it. I've seen some vegetarian efforts and they always look poor.

Not a purist recipe, but I do variations on stir-fried rice as a leftovers/store-cupboard meal.
Cook and cool rice (prefer Brown)
Fry any combination of shrimp, chicken (or other spare meats) , bacon, onion, scallions, garlic, peppers, peas, beans, chilli etc
Add the cooled rice and stir-in
Beat a couple of eggs and stir-in
Finally add either Soy or Teriaki sauce* for the basics and serve.

*A mix of Soy and sweet-chilli sauce works well or other 'Chinese/Thai style flavours/pastes eg. Black bean, 5-spice etc.

Quick, simple, tasty, frugal, dirty - but not authentic!

PS: A gazillion versions on t'internet.....

I often to a "use what you have" version of egg fried rice. As long as you use older rice, preferably cooked the day before. And don't pour beaten egg straight into the mix else it makes everything goggy (do the egg first or in a seperate pan, then add). But a basic one for me is meat, spring onion, garlic, ginger, peppers, green beans, egg, rice, pepper, soy sauce.

Sounds a bit like a rice version of this one that I do with cous cous:

120g onion, thinly sliced
120g chicken breast, diced
70g apricot/plum/apple chopped
80g cannellini beans
100g couscous
15g grated ginger
10cc harissa
5cc coriander leaf
12cc oil
155cc boiling water

Mix the couscous & water in a jug.
Fry the onion until soft.
Add the chicken and fry until cooked through.
Add the fruit and ginger, and then cook for 2 min.
Add the beans, and cook for 2 min
Add the harissa and coriander and stir
Add the couscous.

Yebbut cous-cous is small balls of Pasta,* not a grain in itself.

* OK it is Durum Wheat flour mixed in Oil then rubbed through a sieve and dried but that's so similar to Pasta as makes little difference.

It can be as complicated or as simple as you want. Boil rice. Get out the wok, either sesame oil or stir fry oil, chuck in some diced veg, fry, add some seasoning if you want, chuck in rice at end. Quick, simple.
No don't put the soggy rice in hot oil until its left to dry out a little, the texture will be mushy and just wrong.
Put it in the fridge for a few hours at least
