Someone's already posted the SA ticking, so my second favourite was our pootleton being cheered by small children as we rode out of Wisbech a few years ago, after cycling had been on the TV more, with the tour wins and Olympics and everything, and Cambridgeshire started taking its cycling festival on tour and so on.
I meant the single sharp precise clciking as you move up and down gears

That clanking sound as you return your mug to the saucer,followed by the tearing sound of the wrapper on the free bisquit that comes with a good latte.

Smash the cistern
The sound of a couple dozen cyclists on a London commute clicking in their pedals at a set of traffic lights ready to go.
Along with the beeps of two dozen Garmins resuming from auto-pause.

2nd for silence, 2nd for good tarmac and the noise that my tyres make zooming along it... I quite like to listen to music whenever I'm not in a populated area. So, there's that.

Being partially deaf i wish I could hear traffic coming up behind me more easily... have to check regularly but that's not a bad thing!
