Favourite vegetarian cookbooks!

As a non-chef, I find low technique recipes a god send. I've been impressed at just how tasty some simple dishes can be just with the (directed and informed) use of herbs and spices. I've had a kale and lemon pesto that was a doddle to make and transformed an otherwise ordinary dish into something special.

This is exactly it - food doesn't have to be faffy, and most times, something really simple hits the spot far better than the poncy stuff.

One of my go-to comfort foods is mejadra - a spiced mix of rice, green lentils and fried onions. It's a good accompaniment to lamb or fish, but I'm quite happy to eat it as it is. :blush:

I tend to use the BBC Good Food website a lot. Lots of meat recipes can be converted to vegetarian. I'm a pescetarian these days.
I tend to invent recipes too. Lasagne made with tinned ratatouille is rather nice. I make cottage pie and spaghetti Bolognese with Quorn mince. I'm also rather fond of chickpea curry.
