Roadies in general are disciplined on stops, so it seems to me you are ideal road club material.

The extra 16 miles to and from may be too much at the moment, so I suggest you do a club ride car-assisted - take the bike in the car to the start point.

There will almost certainly be other members doing the same, and in any case no one gives a stuff how you get there.

Using the car to enable you to keep the ride pace and distance shows that, while being new, you have had the common sense to think about the ride in advance.

My only problem is I do not drive... So, I'm looking at trying to meet fellow cyclists who wouldn't mind helping out on this front after I get to know them.

Well today I cycled 36.4 miles with about 3/4 two minute breaks for water and to check gps... This took me two hours twenty minutes

It's ok... I got lost today so was more interested in finding my way back...lol

I'm in Coventry. Just on the outskirts close to the countryside

I'm on the outskirts of Coventry, Holbrooks area. I've never done a skyride. On most of my my usual rides I'm stopping between 25-30 miles, though I sometimes don't stop until 40 miles.

You might well find a skyride too slow, I recon your a shade quicker than me.

I'm on the outskirts of Coventry too - Keresley (not the village). I'm rather unfit and only did 21 miles today in 1 hour 50 - shorter than the both of you and slow too - a circular route mostly on single track lanes to Shustoke and back. Apart from a duty-call of a couple of hours at my in-laws just before home, I took two breaks - one to put my jacket on when the heavens opened and one to take it off when the rain stopped.

The OP asked about stopping times and distances. On our club rides we would typically stop at approximately 10 miles beyond the halfway point.

Taking last Sunday's ride as typical we rode 77 miles and the cafe was at 44 leaving 33 to get home. Obviously depends on the location of appropriate cafes as we don't do pubs.

Not far from me then. I'll be out Shustoke way next weekend, heading for Middleton Hall. The Coventry Road Club are doing a hill climb at Maxstoke next Sunday.
