Mature but not black with the odd spot starting to appear for me. Although its a love hate when the bananas are like that as they taste great but make me cough. Don't know why.

The dark patches on a ripe banana will show up in violet when passed under a UV lamp.
Dark patches from bruising will not.

There is no incentive to eat Bananas in my house. If you leave them long enough they magically* turn into banana loaf!

One thing I learned hereabouts was that when they're on the turn, you can stick 'em in the freezer. They work just as well post-freeze.

And once frozen, you can whip them in a blender to form a soft scoot banana flavour 'nice' cream. yummy.
