My favourite, inexpensive, comfortable touring pedal is the Shimano A520. SPD type with a bit of a platform. Hangs just right for first time clip-in.

Removing that centre pin will save a lot of blood and tears...
There a fantastic flat pedal, there a lot ,but you get what you pay for.
