Some members of the family are so terribly afflicted they won't eat them.

Probably best never to feed them to equines!

If people are terribly afflicted, they're best eating them in very small quantities, regularly. Lets their guts get used to the sugars and then the microbiome quietens its reactions ... I dunno about feeding them to horses, I always liked artichokes too much to waste them on supercharging the manure heap!
