In my experience, the quality of kit makes a bigger difference than the type of bike unless we start comparing recumbents and trikes. Same goes for tire sizes, it's the compound that matters not the size.

In my experience with my bikes it's in the following order: Pub mtb (stock shimano) > Old Race bike (tektro) > Road bike (tektro) > MTB (avid arch rivals) > Fixie (Road bike) (legs + ambrosio carbons) > Trike (Avid BB9s)

My Dawes (racer) and my Carrera (roadbike) have the same same brakes and the same size tires. The only difference is what tire it is. The Dawes is running Michellin Kylions (or something like that), and the Carrera is wearing Michellin ProRace2. Huge difference in braking distance needed due to much better grip.
