If I stand up on a hill it's to avoid having to drop a gear (or maybe there's no more gears to go down). If the gradient changes, then back off the pressure slightly to get the change done. On long hills you need to keep looking/thinking ahead so you don't get caught in the wrong gear.

As is often the case the answer is in the question. I assume you can feel and hear the drive train complain when you do it. Don't change gear under load, you may find your chain goes off like a grenade one day.
