Yes, the pub stuff usually bears faint resemblance to proper Halloumi which was originally just sheep and goats milk. Because that's in relatively short supply compared to the amount of cows they started adding cows milk. You can still get the authentic stuff but it's usually a little more expensive. I have a friend who is Lactose intolerant but she can eat genuine halloumi without the usual digestive issues she gets if she ingests cows milk.
