Time to regrip?

My grips are quite minging. I would have got black ones back on when I get it serviced, but the service is looking a long way off. How easy is it to regrip without a high skill level? In general, would you be thinking these have plenty life in them, or are in disbelief I still have them on this condition?

Give it a go. Even if you get it wrong you can unwind them and start again.
 
Tricky bits:
Maintaining constant overlap. How much overlap.
Note the way your bar tape goes around brake levers. As you unwind it, stop and put it back a couple of times.

I was going to say, they do clean up!

But I admit, I do change bar tape fairly frequently and it does freshen up the feel of the bars. Despite doing it many times, like Dogtrousers I watch a video before I start, just to remind myself of best practice. That Park Tools one is a good example.
