Bit of an odd mix, honey drizzled mackerel with some salad for lunch. The mackerel was sublime...

Cheese and broccoli quiche and a tuna salad, boiled eggs couldn’t fit on the plate.

Tomorrow’s recipe is a veggie variation of a very chilli con carne esk dish, cooked for hours to help all the flavours mix, like a lot of dishes this one is a banger the next day/week.
I tried the meat version and in my opinion the veg is clearly the best ingredient hence the variation.

Yesterday I made an omelette in the air frier. I used a liner and followed the advice on various forums ie 8 minutes at 380°.
Suffice to say the next omelette will be made in the frying pan :rolleyes:

Holy Moly! That's pizza oven temperature! My air fryer "only" goes up to 260, and I wouldn't try making omelette at that.

Used up the rest of the Gammon joint in a 'River Cottage' recipe (though not a Hugh Barely-Withitall but one of his employees).
sliced Red Onion, sliced Mushrooms, quartered Chestnut Mushroom, sliced large Field Mushrooms and diced leftover Smoked Gammon gently fried in EV Olive Oil then spooned onto a sheet of Puff Pastry (scored round the edge so it puffed up) and sprinkled with Thyme (from the garden) then baked for 25 minutes. Cut into quarters and served with Salad :hungry:

Going to try to start a new regime. My stomach has a paunch, I've put on 2 stone since stopping cycling a few years ago (arthritis making it too painful)
So today's food includes..
Rolled oats, no sugar, with milk and a banana for breakfast

Smoked basa fish.(quite a big portion)., some salad and sweet potato slices air fried, a portion of Greek yoghurt with blueberries for lunch

Rolled oats again, banana and Greek yoghurt and a clementine for tea.

What I find really hard is not snacking in the evenings so this will be my first challenge, no more food after tea, till tomorrow morning.

Rolled oats are actually quite nice, first time i remember eating them (maybe as a kid) , and positively good for you to boot.
