Mud mostly as far as I can tell
when I notice - and I must check as the paths were muddy when I last went out - it probably needs cleaning again
if I have a very muddy ride I hose the mud off everything with the hosepipe - including the chain and derailleur cogs where the main build up seems to happen
I have a plastic thingy that the china goes into and you wind it through some liquid in it
I use degreaser
then I put whatever lube I have around
until a few years ago I just used 3in1 and never had
I think the one I currently use is supposed to be for wet and dry conditions
I think as long as it has some kind of lube on it then that is OK as long as it is cleaned when it get mucky
some gather muck worse than other
