Are you sure you measured your I seam right?
Heel on pedal is within mm of the calculation method for me .
Be aware the lemond method is based on 175 cranks so you need to alter the seat height by 5 mm if you have 170d

I've always noted that too. The heel on the pedal with a straight leg method puts me higher than I'm comfortable with.

That's because you're doing it wrong. The heel should just touch the pedal when you sit on the saddle and allow your leg to hang loose, which is called The "naturally cocked" position. In that position the leg will have a bend.

If you straighten your leg you will end up with the saddle too high.
