Top tip - a length of 32mm plastic waste pipe (e.g. https://www.screwfix.com/p/push-fit-pipe-32mm-x-3m-black/83189 ) is just the right size for 1/8” steerers, costs next to nothing, can be cut to size and looks better than multiple thin spacers.

I realise this sounds a bit naff, but it works, honest

If you have to adjust the geometry that much then I would get rid of it as its nowhere near the right size for you.

I always thought that this was an ugly but acceptable bodge/work-around but while looking around for frames the other day came across this and now wonder if it is actually a structural integrity issue ?

Yes, I'd be interested to see that stem under heavy twisting while climbing or when braking hard down a steep hill.

The guy in the shop said it would be ok, I do have my doubts thou.

Will get it cut down based on the above and go back to a flipped stem, how I had it before!

Yes I looked at it and wondered how strong it is, what are the chances of it failing if put under stress.
