I've been using clipless for around 25 years, since they first appeared. I have never had a clipless moment, and I suspect most cyclists of my generation who raced have also never had one. The reason being when we used toe clips we had a shoeplate which located over the edge of the rear pedal cage to keep your foot from pulling out. After you moved off you pulled the toe strap tight and your foot was locked on the pedal, before stopping you leant down and flicked the quick release on the strap open so you could extract your foot. This very quickly became second nature but was a bit of a ritual, so when clipless first appeared the act of just twisting your foot to release was a revelation and very easily mastered.

Each to their own, but I would never feel safe riding on flat pedals without any retention.
