I used to run m+ 700x35 on CX commuter and agree with eveything op wrote plus I got a tear in rear tyre after a week so bought another one. Not blaming the tire, it was just road conditions.

Are you sure the deflation is due to a puncture?
My new Cube Agree C:62 SL came fitted with Schwalbe One 700x25c tyres which have had BOTH deflate the cause being the presta valves detaching from the the tube?

No worries, I had a pair of ('23') Ultra Sport on my Ridley, for a couple of years
It never went out in the wet, so can't comment on grip there, but the rear did 'square off' to. seemingly, an exaggerated extent
(wet!!, heck it's not moved out of a spare bedroom for well over 2 years now!!!)
