Yep, waxy if at all possible. The worst spuds are the ones that are rock hard for ages, you watch them minute-by-minute, then the next thing they've exploded into a million floury pieces while your back was turned for 30 seconds.
My Monday pie recipe has a lid that's tiled with potato slices, and as cookery faffs go, putting that on is one of my pet hates.

At least with tartiflette you've got something to press against (and you should!)
 
TBH i have only ever bought is as a ready meal or sauce.

There's your problem, then LOL

Ready made / curry house stuff (especially the punchier curries) is tailored to the "what's the hottest dish on the menu" brigade. And that's from a friend who knows the owner of several local curry houses, btw.

Of the shop bought ones Jalfrezi is the hottest i can enjoy.

That surprises me. A jalfrezi is a pretty spicy and chilli-centric curry. The literal translation of the name is hot and spicy stir fry.

Maybe, as you suggested, it's how the chef/shop prepare them.
I do make my own from spices but also buy ready meals from Aldi. I normally get Tikka, Rogan Josh or Jalfrezi.
IYO should I try a Madras.......I promise not to sue you.

I haven't bought a jar of sauce or a ready meal in years. Just bear that in mind. ;)

I am new to all this cookery stuff. I have always dabbled but had a busy life and Sue did all the main stuff.
Since she died it was 'sink or swim'. My next foray will be slow cooker corned beef hash, enough for maybe 5 portions.

Mine was as hot as I chose to make it, i.e. only one chilli. Not too much. As @Reynard said, you need to be able to taste it

So........ I have only used chilli powder.
Its no good me getting fresh chillies as they would be wasted.
Therefore, am I best buying whole or chopped dried chillies ?

Chopped dried chillies are your friend here. I keep three kinds:

1) Chipotle - hot and smoky, mostly for Mexican or for chutneys.
2) Chilli flakes - middling heat, your "bog standard" chilli
3) Kashmiri - mild and fruity, but still pack an "oomph" if you use a lot of them

When it comes to curry powder, buy mild, and then jazz it up to how hot you need your curry to be. A good garam masala also helps. Look in the World Foods aisle in the supermarkets, as it's better & cheaper than the little glass jars.

End-of-Christmas-capon soup done tonight: fried two large onions and a lot of garlic, added to everything that was left of the capon in boiling water, with herbs, lentils and seasoning, boiled for an hour or so. Retrieved all the bones and skin by hand, liquidised everything else into a couple of pints of tasty soup... even if it doesn't look pretty, it's delicious. Perfect for more chilly days ahead. with good bread.

Stir fried shredded brussel sprout tops, peppers & tomatoes & brown rice (using up some of the Christmas bits from the corners of the fridge)
