Parsnip, pumpkin & sweet potato tikka masala with basmati rice. And totally random braised red cabbage on the side.

Again, using up a) random items from the fridge, b) 15p Xmas veggies and c) a dented can of tomatoes and a dented can of chickpeas from my YS canned goods stash.

Curry paste and sauce made from scratch as per usual. The red chilli lurking in the veggie drawer in the fridge was a bit more radioactive than expected. Cue dribbly nose whilst eating! :heat:

If I'd thought of it, I'd have put tinned toms in the capon soup, for flavour and added colour.
 
An experiment at lunchtime: 'chickpea burgers'. I needed something quick, easy and tasty, so mashed up a tin of chickpeas with a fork, added two cloves of crushed garlic, seasoned quite heavily, mixed well, formed into little burgers, and fried in lots of olive oil. Delish.

I think you're describing falafel here :laugh:

Add cumin and chilli to it as well. Serve in a wrap with salad, hummus and chilli sauce. :hungry:

Well, I'm quite pleased if I've discovered a classic dish by chance!!

Quorn mince and veg Burritos in our house tonight...with tzatziki and fresh chilli... accompanied by sweet potato fries.
Going to spoil the Jan health kick by going to the pub now...well at least I'm going to walk.
 
You do have a varied, I’m tempted to say eclectic, diet

That's as good a way to describe it as any. :smile:

It's largely down to yellow stickering, having a good store cupboard / freezer, and cooking with what wants using up. The pumpkin, bought from a stall by the side of the road, needed using - cooked the other half previous week. The bread, free range eggs, avocado, tomatoes and baked beans were all bought on YS, and the other ingredients were from the store cupboard (onions, carrots, celery, Thai red curry paste, curry powder, coconut milk, red lentils).

I've got the pumpkin seeds currently roasting in the oven - they'll be nice to snack on.

Bottom line, I'm not fussy when it comes to food. :hungry: And I don't like to waste anything either, if I can help it.
 
Pan-fried sea bass, triple-cooked chips (I fry them in beef dripping), steamed carrots & sprouts, and home made tartare sauce. I also made an apple & mango crumble, but no room for pud tonight!

Sea bass a YS buy in Waitrose, tatties were freebies from a spill I came across by the side of the road, and the veggies were from the Christmas 15p offers in Tesco. Apples for the crumble were from the community orchard, and the mangoes were also a YS buy.

Back from three weeks away, so some bulk cooking to restock the fridge and freezer: a chicken pasta thing last night ('thigh fillets' with chick peas, onions, garlic and mushrooms, in tomato sauce); and a spicy carrot & parsnip soup today, for quick snack lunches with bread. All heartily warming.
