Phone and Keys.
If there is a good chance of rain, a waterpoof jacket tightly rolled up.
Longer rides maybe a snack.

Left pocket: flannel (I get sweaty) & cycling cap
Middle pocket: arm warmers (if required) and clip on sunnies for me glasses
Right pocket: food (gel/flapjack).
Zip pocket: phone.
Sometimes squeeze in another small bidon somewhere if going on a longer ride.
Tools in a tool bottle on frame, waterproof jacket and spare tube strapped under saddle.

Typically:
Left pocket - snacks
Middle - phone
Right - keys and a pack of tissues
Everything else (tools, tubes, jacket if I expect rain later) goes in my frame bag as I reckon I won't need to access them quickly.

The older I get, the faster I used to be ...
Handkerchief, map/routesheet, lightweight jacket/gilet, energy bar - soft things
......... I then leave out anything that will hurt/dig in. I don't fall off very often and definitely wouldn't want any thing doing unnecessary damage to my delicate person!
^^^^ this - I know a rider whose phone seriously damaged his back in an off, and almost put an end to his cycling.
