Lets have them.

So to kick off:

Brunch Muffin


6 Quality Sausages (I use Sainsburys 'Taste the Indifference' Pork and Leek)

6 Rashers Smoked Streaky Bacon

1 Small Onion

2 Slices White Bread whizzed into crumbs

Muffins


Finely chop the bacon and onion then fry until cooked through. Drain off any excess fat and allow to cool a little

Skin the sausages then mix all the ingredients thoroughly in a bowl, season and add a little flour if the mixture is too sticky.

Shape into 6 thin burgers just a little larger than a muffin.

Fry the burgers, toast the muffins and assemble with a little mayo or ketchup.


* The burger mix also works well made into small meatballs to serve with pasta and a tomato sauce.

In mt younger days back in Sheffield we used to go to an old mobile cafe, used mainly by the late night taxi drivers. Special was called a "CHEG" burger for £3.
Consisted of a bun base, first layer was a thin omlett, then the burger meat then melted cheese topped by the bun. God knows how much fat was in these things by my, were they gorgeous!

Economy burger....

Borrow:
500g pack of lean minced beef
1 medium onion finely chopped
1/4 tsp salt
coarse ground pepper
yolk of one egg
Worcestershire sauce
fine oatmeal
tabasco sauce (optional)

break the mince into pieces in a mixing bowl and liberally sprinkle with pepper and add salt, egg, onion and oatmeal. Add a couple of shakes of Worcestershire sauce and tabasco to taste.

Mix together and divide the mix into four for 'quarter pounders'. Shape into balls then squash into burger shapes.

Gently fry, grill or place into 'George Foreman grill'.

Serve with whatever takes your fancy.

Nice one Vernon, I do a very similar one where I grate the onion (then squeeze it out) and add a teaspoon of tommy ketchup.

Mince it yourself on a coarse setting - shop mince is too fine for burgers.

Add a lot of black pepper and some salt

Shape into burgers, leave for half an hour in the fridge and then barbecue.

Oh Yes indeedy,that ^^^^ is the way to go. I've always been told to leave the burger as plain as possible apart from basic seasoning and pep it up (or down) once cooked

(Option) Add about 2 tablespoons of chopped fresh sage per 1/2 kg.

Shape into burgers, leave for half an hour in the fridge and then barbecue.

Fair enough, but if you have some sirloin then just cook it rare, slice on the angle and stick it in a ciabatta with mustard, why mince some quality meat?
 
Minced beef or lamb

Two or three (or four) hot chillis

Half a red onion or some shallots

Salt and pepper


Chop the chillis and onion, squish all the ingredients together into 3/4 inch thick burger shapes, cook for perhaps two or three minutes per side on a really hot grill so they're still rare in the middle. Eat. I don't know why anyone buys ready made burgers.
 
Good quality minced beef

Salt and pepper to season

Garlic pepper for a little extra flavour* (this is not overpoweringly garlicky)

Drizzle of olive oil to help binding and add a bit of extra fat

Chuck all of the above into large bowl and mix well.

Shape into burgers and grill... when nearly ready top with cheese (mature cheddar or a blue if you like) and melt the cheese.

Insert into bun and scoff :hungry:


* You could also try Cajun spice, steak seasoning.... whatever you fancy really

Economy! I can remember using texturised vegetable protein, and a small amount of mince. Then the recession came.
