A very, very, sensible policy.

How do they know it was due to bicarb? This is just hearsay, but a well-known British rider is said to have suffered a degree of osteoporosis from long-term use of bicarb.

Long distance cycling is well-known as a risk factor for osteoporosis, maybe 2/3 of pro cyclists suffering to some extent!![]()

Maybe individual rides are not long-distance by long-distance audax standards but the top 100 pros average around 30,000 km a year which is a lot by almost everybody's standards. (The speeds they do are a big factor too.)As I said, just hearsay. Not a long-distance specialist.
It sounds to me like one of those meme things "Performance physiologists don't want you to know this one weird trick".
Not saying there isn't something to it, but that's what it reminds me of.

As I said, the link with bicarb is just hearsay (hearsay from testers, who are known to have a tenuous grip on logical thinking).
Surely you take speed to go faster?
