Any recommendations for something similar, they seem to vary wildly in price from about £20 to over £200

I'm going through a very similar process to you at present (i.e. building up a steel frame from scratch) and I've gone for this headset: http://www.ebay.co.uk/itm/190939738138?ssPageName=STRK:MEWNX:IT&_trksid=p3984.m1497.l2649 on the basis that it has sealed bearings, was a reasonable price and looks OK
I've used M Part headsets in the past and they're OK.
I recently bought a Neco headset from Ebay (for another bike), but the seller has no stock at present. That was excellent value - if you're not in a rush it may be worth waiting to see if the seller gets more stock. Memories for me too. I have lived in Lower Morden, Raynes Park and New Malden in the past. Chapeau to all you guys who cycle around there, it was bad enough 20 years ago.

Bit more than the ones you've linked to. I would much prefer to buy from an online retailer or shop than eBay (as much for ease of return when I inevitably get the wrong thing)!

Yes, IMO - easier to get that balance between no play and light turning handlebars. Some may argue that they're less serviceable and won't last as long, but they will last for several thousand miles IME.
Also worth looking for a split crown race - much easier to install (and remove!)

Well I wasn't going to have a new saddle, however having bought the grey tape, I have now found a grey WSD one, I didn't think such a thing existed...BUT it's £80

Shimano long drop brakes, will be adding cross levers (likely to be Tektro I expect)
SRAM rival groupset
How much will I need - don't know if this makes a difference but it's a 54cm frame, 100mm stem, 38cm compact drop bar
Also, there appear to be sundries for cabling too (bear in mind I have no parts)
