Is liver still really cheap?
Always used to be.
Was never sure why as I think it's supposed to be pretty good for you.
The appearance/associations I suppose?
which is maybe why I haven't had any in years - used to have it a fair bit as a student.

Can someone remind me of the heirarchy of good liver?
seem to remember that lambs was seen as better than many?

The nickname strainers may help.

I love a bit of liver or kidney.

Never cooked offal

but I like teak and kidney pie - better than just steak
and if liver and onions in on in a pub/restaurant that I know it is a serious option

I really should try to cook it myself - apart from anything else I could add more onions - and more onions is always good!!

tripe - from what I hear and read - waste of time and effort
heart - seems like it is just a muscle and if cooked well it is great
then there is 'sweetmeats' which is - I think - pancreas????? - apparently wonderful if cooked properly - never tried it

Sweetbreads, not sweetmeats - the thymus and (often) pancreas of lambs or calves. English lamb sweetbreads in late spring are utterly delicious.
