Spaghetti carbonara. Done ‘properly’ except for substituting the required guanciale with the generally accepted pancetta. I’d been a bit wary of this dish but it turned out to be quick and straightforward. It requires good timing but the results were great. Just eggs, pecorino romano, pancetta, black pepper and a splash of pasta water.

Top tip for Carbonara. Scoop the pasta dripping wet into the pan with the pancetta/fat without straining, keeps it moist & the sauce comes together easily. I usually add 4/5 tablespoons of water slowly whilst stirring in the egg/cheese mixture for extra silky sauce. Rigatoni works well too, with lots of surface area for the sauce to stick.

Exactly what I did! I reserved a cup of water from the pasta pan then took the pasta straight into the frying pan with the pancetta and its oil, tossed it all about (off the heat) and then in with the egg/cheese mix and vigorous stirring for a lovely cream texture.

Away from solid food..........

My daughter has got me hooked on iced coffee !!
Aged 78 and I have never tried it before.
My variation is..........
Mix 2 spoons of decent granules with a small amount of brown sugar** (less than 1/4 teaspoon) and a small squirt of runny honey.
I pour a small amount of hot water in so as to dissolve the above.
Leave in fridge overnight.
Add cold milk...... and slurp away :smile: .
**brown sugar as that's all I have.
Personally I don't need ice cubes but would if sat in the sunshine.

A thought.
I am, sadly, off alcohol but imagine a nice whisky or cognac added would be nice.

The ice cubes are mainly for if using hot coffee...

I tried to order iced coffees when cycling in France, bar tender said "no, but I can do you 4 grand creme's and a bowl of ice cubes....."

Another good alternative to guanciale is the cured, cooked and smoked pork belly called "Boczek" from the Polish aisle. It's got a more punchy smoke than the pancetta available here in the UK.

A new recipe tonight, Rigatoni alla Zozzona (filthy pasta).
Cured pork & sausage with tomato/egg yoke/cheese sauce.

Vincenzo has a good youtube channel.
I only used 1 400g of tomatoes & 250g of rigatoni, plenty of sauce for this a mount of pasta. I'd looked at quite a few recipes, some use wine/chilli aswell.
Thanks. I’ve imported it into Recipe Keeper, which is probably the best iPhone app I’ve ever bought. One of it’s benefits, to me, is it downloads and organises the recipe and strips out the adverts

A simple mushroom omelette with tomatoes and a good wholemeal bread. I was surprised it was so tasty! I used loads of mushrooms, 4 eggs, 3 chopped chillies, blackpepper, salt, 1 chopped clove of garlic.
