Top tip for Carbonara. Scoop the pasta dripping wet into the pan with the pancetta/fat without straining, keeps it moist & the sauce comes together easily. I usually add 4/5 tablespoons of water slowly whilst stirring in the egg/cheese mixture for extra silky sauce. Rigatoni works well too, with lots of surface area for the sauce to stick.
