As the GLW is away for a week or so seeing her mum, I'm fending for myself and tending our cats.
Looking in the 'fridge, on Thursday I shall spend some time creating something from mackerel, avocados, onions, carrots, fresh spinach with cheese, coleslaw & humous available to liven things up - ! :laugh:

Fish madras, thawed and reheated.
 
Bolognese pasta bake using YS beef mince and bacon, tomatoes & herbs from the garden and freebie onions picked up on a bicycular bimble. Oh and a good dollop of cheese mixed through too.

Well, this afternoon ready for post-work: chicken in a mushroom & leek white sauce. Pasta to be cooked later.

I've happened upon a decent curry that tastes pretty much like a Dhansak you'd get from a takeaway. I use a Patak's curry paste (tikka masala or bhuna).
Chana Dahl (split yellow peas/lentils) - boil for 40 mins. Then cook chicken and onion in oil, add paste, add strained chana dahl, add lemon juice. Simmer and add yoghurt and corinader leaves at the end. I also add sugar and a load of salt, and some extra fenugreek because I love the smell. We now have it about twice a week
