Mmm, midnight feast, as I was peckish... venison sandwich, but the bread drizzled with olive oil and seasoned with freshly ground salt and pepper. Better than expected. Delish, in fact.
 
Made a lovely pot of soup this afternoon, using a bunch of veggies (onion, carrot, parsnip, celery), pearl barley and some dry-aged beef trimmings that I picked up cheaply in Waitrose.

So had a bowl of that, followed by veggie chilli and triple-cooked chips* in beef dripping.

* still using up the free tatties I found spilled by the side of the road.

I've been souping too, with a couple of free pumpkins a friend gave me. I've learned the lesson of adding plenty of spice (turmeric, cumin, smoked paprika and cayenne pepper, and a couple of stock cubes) to add flavour, but it's a lush colour and flavour now.

Chicken thigh fillets stuffed with home made sage & onion stuffing and then wrapped in bacon*, garlic & herb parmentier potatoes, sprouts, roasted sweet potato chunks, sage & onion stuffing balls and homemade cranberry sauce.

Seasons Eatings, everyone! :hungry:

* pan fried to sear, then finished off in the oven for 25 mins @ 180C fan

A new one for me - a cheaty chicken, pepper and mushroom stir-fry using a chili & garlic sauce from a packet, but 10 mins to do, with some basmati rice, and it's delish.

Not tonight, but on Wednesday, my culinary creation was baked salmon with orange & chilli, garlic & rosemary parmentier potatoes and steamed, buttered greens.

Last night was rigatoni in a tomato, bacon & mushroom sauce.

No, full of flavour 'enhancers' and crap.......................You can make a far better (and healthier) sauce from scratch

Not in the time it takes to open a sachet you can't. I will be 79 soon so a few extra Es won't bother me. They serve a purpose.
Don't get me wrong..... tonight I will have my home made burgers, sautèd potatoes, mixed veg and gravy.......but as I say, sachets do serve a purpose.
 
Sweet & sour sauce = stock, tomato ketchup, chopped tinned pineapple in syrup, and cornflour to thicken.

Chinese curry sauce = stock, curry powder, chinese 5 spice powder, cornflour to thicken. Add some chopped apple and sultanas, and you then have a reasonable approximation of a Japanese Katsu sauce.

When I say stock, just use a bit of a stock cube made up with however much water is needed.
