Small and small top
Large and large bottom
The old chain was 57inch this is now 55inch

55 was according to this calculator

What do we think too long, short or ok?

Firstly,
Good job on getting the gears sorted.
Secondly,
The chain is OK as it is. (It fits and works).
But IMO it was better before you shortened it.

When you pedal backwards it catches on the furthest jockey wheel from the cassette after a couple rotations is that normal

Grab hold of it either side and flex it sideways (left/right) to loosen it up.

Re-riveting links in a 10 speed chain is not advised. Break once, rejoin only with a quick link (or special rivet) seems to be the advice, I'm not sure why.

If you can't free it up, you may need to remove and replace with another quick link.
